Terroirs: Clayey-Marly, Marno-Greseux
Vinification: Selection of grapes at harvest time. Manual harvest, rigorous sorting, vatting for 6 to 8 days in punching down tanks, devatting and gentle pressing, continuation of fermentation in temperature-controlled tanks, malolactic fermentation, maturing on fine lees for 5 months, filtration on tangential filter.
Food pairing : This wine will be the perfect accompaniment to white meat, game birds and also grilled meats.
