Auxerrois Hospices de Strasbourg

Particularity: This wine, harvested and vinified in the Cave de Cleebourg, was then selected by a jury of tasters as having the quality, potential and honour to be matured in the ancestral casks of the Cave des Hospices.

A brilliant robe of a fairly deep yellow with golden reflections. This wine reveals pleasant aromas of white peach and jasmine on the nose, nuanced by vanilla notes characteristic of this maturing in casks. On the palate it is tender and delicately fruity with notes of pear and peach in particular. This Auxerrois will surprise you with its frankness and structure. A finish with lemony scents adds complexity to the palate and makes this wine harmonious and very gastronomic, ready to spice up the finest dishes.

This Auxerrois can be enjoyed now to take advantage of the very special aromatic expression of this grape variety, but can also be forgotten in your cellars for at least 4-5 years during which it will express its full potential.

Specifics

Terroirs: Clayey-marly, Marl-sandstone

Cultivation practices: Yield control, soil tillage and vineyard management using integrated pest management.

Vinification: Selection of grapes at harvest time, slow pressing respectful of the harvest, cold settling, alcoholic fermentation in temperature-controlled vats, ageing in ancestral tuns in the Historic Cellar of the Hospices de Strasbourg.

Gourmet harmony: A great wine which will be the ally of choice of many varied dishes, as well on white meats as on fish, and which will accompany marvellously the local specialities like the "Bouchée à la Reine" or the "Pot au Feu".
