This wine is the ideal companion for an autumn cuisine. It will be perfect with simmered dishes, roasted poultry with mushrooms, accompanied by a butternut purée.

Specifics

Place of production: Cleebourg wine region, in the communes of Clee-bourg, Rott Steinseltz, Wissembourg, Oberhoffen, Riedseltz (Alsace, France).

Terroirs: Clayey-Marl, Marno-Gressy soil

Cultivation practices: Yield control, soil tillage and vineyard management using integrated pest management.

Vinification : Selection of the grapes at harvest time, slow pressing, cold settling, alcoholic fermentation in temperature-controlled vats, filtration through a tangential filter.

Gourmet harmony : This wine is the ideal companion for light, springtime cuisine. It will go wonderfully well with asparagus, mixed salads, or a baeckeofe.

This Auxerrois should be enjoyed in its youth to take advantage of its exuberant fruitiness.
