Cultivation practices: Yield control, limited to 68 Hectolitres/ Ha, tillage and integrated pest management, respect of a "Lieu Dit" Charter, inspection of the plots by a Technical Commission during the summer to validate compliance with the Charter.
Vinification: Selection of grapes at harvest time, manual harvest, rigorous sorting, slow pressing respecting the harvest, cold settling, alcoholic fermentation in temperature-controlled vats.
Food pairing: Aperitif wines. Try it with strong cheeses or sweet dishes.
A 2018 vintage with exceptional ageing potential, this Gewurztraminer can be drunk now but can also be forgotten in your cellars for at least ten years.
